No Cook Pasta Salad

Ingredients

  • 1 cup cooked unsalted pasta (like bowtie or penne)
  • ¼ cup diced cucumber
  • ¼ cup red bell pepper
  • 1 tbsp olive oil + 1 tsp apple cider vinegar
  • ½ tsp Italian herb mix (salt-free)
  • Optional: ¼ cup diced grilled chicken or egg whites

Directions

  1. Add all the ingredients to a large bowl.
  2. Toss until well-coated and combined.
  3. Chill in the refrigerator for 15–30 minutes.
  4. Serve cold.

Precautions

  • Use unsalted pasta or rinse thoroughly after boiling.
  • Avoid bottled dressings, which may have phosphate and sodium additives.
  • Optional proteins should be phosphorus-checked (avoid processed meats).
